Ingredients (2 servings)
– 2 large eggplants
– 3-4 small tomatoes (or more cherry tomatoes)
– 100 g mozzarella
– 4-5 cloves of garlic
– olive oil
– 1 teaspoon of lemon juice or vinegar
– salt and pepper
Prepare a barbecue (or preheat a broiler). Cut the eggplants into slices about 1/2-inch thick. Spread on a baking sheet and brush with olive oil on both sides. Set aside.
Fry the eggplants in a pan or grill. Separately prepare a sauce of garlic, 3-4 tablespoons olive oil, vinegar, salt and a few tablespoons of water. Dip each piece of eggplant in garlic sauce and place in a tray lined with baking paper. On each eggplant slice put a slice of mozzarella and a slice of tomato or half a cherry tomato.
We put the tray in the preheated oven (180 degrees C) for 10 minutes until the mozzarella is slightly melted.
Season with pepper and serve immediately, it smells so good that you do not how to resist 🙂
