– 4-5 small tomatoes
– 2 small zucchini
– 3 red onions
– 10-12 small mushrooms
– 1 bell pepper
– 1 clove of garlic
– dried thyme
– 8-10 tablespoons olive oil

Method:
Wash and clean the vegetables and cut them into chunks.  Alternately thread zucchini slices, mushrooms, onions, tomatoes, and bell pepper onto the skewers. Whisk the oil with the garlic and the dried thyme and brush the mixture over the vegetables.
