Ingredients (4-5 servings)
– 6 eggplants
– 4-5 different colored bell peppers
– 3-4 small zucchini
– 10 to 12 cherry tomatoes
– 1 leek
– 4 tablespoons olive oil
– 1 bunch parsley
– 2-3 cloves of garlic (optional)
– one half teaspoon of salt, pepper, paprika, coriander, marjoram, oregano, basil
Method:
Preheat oven to 200 degrees C.
Wash all vegetables and cut them into pieces. Lightly oil a large, shallow baking dish. Combine vegetables in prepared baking dish, and lightly salt. Brush with olive oil. Put the baking dish into the oven for about 30 minutes. At half time we turn the vegetables on the other side. When all the vegetables are tender turn off the heat.
In a saucepan heat some olive oil and add the finely chopped garlic and the spices and a half a cup of water. And we let the sauce to boil for a few minutes. Put sauce over vegetables and cook for a minute.
When you stop fire sprinkle with parsley. From vegetables prepared like this, we get a perfect side dish for steak or some pasta or brown rice.
